Zucchini Antipasto

Another inexpensive delicious antipasto. This time with zucchini and dates.

Preparation time 10 minutes .. Baking 15-20 minutes .. Durability 3 weeks in refrigerator

INGREDIENTS .. 8-10 pers

  • 4 little zucchini
  • 1 onion, chopped
  • 6 cloves garlic, finely chopped
  • handful dates, in chunks
  • 1 tbsp oregano
  • 3 tbsp balsamico vinegar
  • 1/2 cup olive oil
  • 1 tbsp salt
  • black pepper

PREPARATION

Grate the zucchini, onion and chop the garlic. In a baking dish put half the oil and all the other ingredients, mix them all together and finally spread the remaining olive oil on top. Take the high oven (about 200 degrees) for 15 to 20 minutes. Half the time remove the baking pan, take a good mixed and return to the oven. Once it begins to brown at the edges, it is already good. Sure, very dry.

Put on glasses, if you want to put more oil on top. When cold, cover and store in the refrigerator.
