Sponge dough

Basic dough for the most of sweet or, with a small adjustment, also savory pastries, breads and cakes.

Preparation time 15 minutes .. Rising 30-45 minuten


  • 600 g flour
  • 300 ml milk
  • 25 g fresh yeast
  • 30 g sugar
  • 1 egg yolk
  • salt


Put a little lukewarm milk, yeast and half of the sugar to a bowl to make a yeast water and wait until it is frothy. Sift the flour, add oil, egg yolks, remaining sugar, yeast water and mix until dough. Add salt, remaining milk and knead the dough. Let him then rise for a 30-45 minutes in a warm place.
