Real Lemon fudge ®

Looking for real lemon fudge I did not find any recipe. Only yellow coloured candies named lemon fudge. So I decided to make my own Real lemon curd fudge and boost it with delicious and crunchy French meringue.

Preparation time 30 minutes .. Cooling 2 hours .. Durability few days due too yummy

INGREDIENTS .. ± 100 pcs

  • 170 g lemon curd
  • 400 g white chocolate, chopped fine
  • 150 g unsalted butter
  • zest of one lemon
  • some Bigarreau cherries, quarted


Warm up the lemon curd in the bowl over the pot of hot water, whisk in the white chocolate to melt, and add the chunks of cold butter, one piece at a time, until all the butter incorporates smoothly into the curd. Add the cream cheese in small chunks, optional, and whisk until smooth.

Strain the mixture using a fine-meshed strainer into another heat-resistant bowl.

TIP 1: For best quality curd, straining is important to achieve a silky smooth curd. Add the lemon zest and stir to combine.

TIP 2: Add the zest after you strain the curd.

Mix in broken pieces of meringues and pour the fudge into the pre-baked cooled tart shell/s. Chill in the refrigerator. The fudge will set firmly.
