Norwegian herring with green tartar

Finally came the season of herring. And they are at their best with a tartar of green apple and cucumber.

Preparation time 20 minutes


  • 8 Norwegian herrings
  • 2 Granny Smith apples
  • 1 cucumber
  • 2 tbsp elderflower vinegar
  • 1 tbsp olive oil
  • salt & pepper


Wash the apples, peel them, remove core and cut into small brunoise. Cucumber wash, peel, remove inside part with seeds and cut as well as apples.

Mix these two ingredients together in a bowl add season with bright elderberry vinegar, olive oil and lightly salt and pepper. Mix everything together and let stand for at least 15 minutes.

Serve prepared green steak nicely on plates, add pieces of herring, decorate with watercress and serve with dark bread.
