Passion fruit sherbet

My husband came up with a great idea to us POVVI with passion fruit sorbet to combine. Said so, made so and here is our fresh and delicious sorbet for you.

Preparation time 30 minutes .. Cooling over night


  • 12 passion fruits
  • 2-3 thick Tbsp honey, or glucose
  • juice from 1/2 lemon
  • 1 gelatin leaf, soaked in cold water or 2 g of agar agar
  • 1 egg with from large egg


Mix the pulp, glucose or honey and lemon juice together in the bowl.
Late in the ice cream machine run until the solidification begins to form and only then add the whipped egg whites. Run the engine until the desired thickness.

The egg whites break down the acidity of the passion fruit and also ensure a lighter result.
