Mint & Parsley pesto

Delicious pesto perfectly suited to dishes like pasta with lamb.

Preparation time 7 minutes

INGREDIENTS .. 4-6 pers

  • 2 bundles parsley
  • 1 bundles mint, only leaves
  • lemon juice 2 small lemons
  • 1 clove of garlic
  • 10 tbsp olive oil
  • salt & pepper


Chop the parsley and mint leaves into smaller pieces and place in a blender or deep pot. Add the crushed clove of garlic, 10 tablespoons olive oil, lemon juice and salt and pepper. Mix everything in a blender until not too thick pesto. If you want you can also toasted pine nuts in heels.

Use as a seasoning for fish, toasts, or bruchetta’s. But also to flavor your pasta in the pan or oven-baked meat. Pesto tastes especially good with lamb. You can use a 1-2 tsp of pesto as one of ingredients for your salade dressing too.
