Fresh salad with Mint & Parsley pesto

One of the ways my pastas also used. Delicious, fresh taste of this salad is truly irresistible.

Preparation time 7 minutes



Wash and dry the tomatoes and cucumber. Chop the shallot and put them in a bowl. Cut cucumber into thin rings and the tomatoes into quarters and put everything into the bowl.

For the dressing, put in another bowl pesto, 2 tablespoons olive oil, the vinegar and mix well together.

Pour the dressing over the vegetables and mix well together. Season with salt and pepper.
