Marinated chicken breast

This dish I Paris, eaten in the Beaubourg restaurant. Easy, fast, fresh and very tasty.

Preparation time 30 minutes


  • 3 limes
  • 2 tbsp soya sauce
  • 1 tbsp liquid honey
  • 3/4 pound chickenbreast
  • little piece ginger
  • parmesan cheese, in thin slices
  • rocket salad


Grate the green rind of 2 lemons, squeeze the fruit out.

Marinade: ginger, soy sauce, honey, half the lime juice and half the zest. Stir well. Keep a little bit of your marinade aside for later to brighten your rocket. Cut the chicken into chunks. Stir it with the marinade. Allow 15 minutes to marinate.

Fry the marinated chicken.

Toss the rocket and some parmesan cheese flakes in the marinade that you had put aside. Dress the chicken on the plate and garnish with the arugula / parmesan mixture.
