English recipe for bread of whole wheat flour and sourdough.
Preparation time 10 minutes .. Rising 45-60 minutes .. Baking 30 minutes
- 2 tbsp fresh yeast
- 1,3 cup lukewarm water
- 2,7 cups whole wheat flour
- 1 tbsp salt
- 1 tbsp raw sugar
- 5 tbsp olive oil
- melted butter for the glazing
Mix the yeast with a little water. Then mix all ingredients together in a bowl and thoroughly mix into the dough. If the dough feels dry, add water to the slag (or soak your hands in lukewarm water and knead the bread till your hands be dry). The amount of water in the recipe is just a guide as each absorbency of the flour is different.
Then create the loaf and let rise for 45-60 minutes, until doubled in volume. I put mine to rise in an oven preheated to 122°F. Brush the bread after proving with melted butter.
Preheated the oven to 446°F. Insert the bread into oven and oven floor sprinkle with water. Then lower the temperature to 392°F and bake the bread about 30 minutes.
After baking, let it cool on a wire rack.
