Cranberry pinwheels

Great for breakfast or with coffee.

Preparation time 30 minutes .. Rising 30 + 15 minutes .. Baking 15 minutes

INGREDIENTS ..

  • 500 g pastry flour
  • 300 ml milk
  • 8 tsp sugar
  • 4 tbsp oil
  • 1 yolk
  • 1/2 tsp salt
  • 21 g fresh yeast

FILLING

  • handful not too fine chopped pistachios (or other nuts)
  • 60 g soaked cranberries (or blueberries)
  • 10 tsp sugar
  • 1-2 tsp cinnamon
  • 1 sachet vanilla sugar
  • 50..70 g melted butter or margarine

PREPARATION

Sift the flour into a bowl, add the granulated sugar, oil, salt, yeast and milk. The dough is not firm but soft hold. Let it rise for about 30 minutes. After proofing the dough a bit and roll dough into a square 4 mm thick. Brush with melted butter. Mix together granulated sugar, vanilla sugar and cinnamon and spreads thus the dough.

Spread over even the chopped nuts and cranberries and roll the dough into a solid role. Cut pieces of 2-2,5 cm thick and place them on the cutting edge greased or parchment baking foil or inlaid tray. Brush with melted butter, let rise for another 15 minutes and bake in the oven at 180°C to red. Let cool on wire rack. You can eat them immediately or freeze for later.

TIP

For a nice breakfast after freezing them warm in microwave at 1000 watts about 35 sec.

The nuts are optional, so you can skip them.
