Mam’s sour cabbage soup

This is our family but also in the whole Slovakia a typical, traditional Christmas Soup with content of specific ingredients according to regional customs. It is a delicious, healthy, rich and nourishing soup which appears on the table only once a year – on Christmas Eve. We call it also “prayer soup” because you should never eat that soup without praying before eating.

Preparation time 60 minutes

INGREDIENTS .. 6-8 pers

  • 500 g sour cabbage with moisture
  • 1 onion
  • handful of dried wild mushrooms
  • 4-5 dried prunes
  • 250 g smoked meat
  • 2 smoked sausages
  • 2 tbsp lard
  • 2 tbsp flour
  • 2-3 cloves garlic
  • 1 tbsp ground sweet red peppers
  • 1 bay leaf
  • 1/2 tsp cumin
  • marjoram
  • salt and pepper

PREPARATION

Is the cabbage long, then cut into smaller pieces and bring to a boil with washed, wild mushrooms (if they are large, cut into small), smoked meat and bay leaf. Let everything simmer about 45 minutes. Make in another pot a thicker roux: fry the flour in a little lard or oil to light pink, add the red pepper powder (leave them baking in the roux not long, otherwise it’ll be bitter), pour over the juice of sour cabbage and water. Let the roux cook a little and add it to the sour cabbage. Now add crushed garlic, pepper, prunes, cumin and add sliced ​​sausage. If needed, add some water and let it cook little more. Shortly before the end add a bit of marjoram.

Serve with cooked dough soup pasta.
