Vega salad

Delicious, nutritious and easy salad not only for vegetarians. I usually make this salad for lunch but she is fantastic as a celebratory meal for New Year’s evening or other location Gentile. If I use them so much with ham rolls.

Preparation time 20-30 minutes

INGREDIENTS .. 4 pers

  • 200 g natural tofu cheese from organic shop
  • 50 g sterilised red peppers
  • 50 g canned peas
  • 50 g sterilised sour pickles
  • 50 g canned corn
  • 50 g canned mushrooms
  • 50 g ketchup
  • 50 g spring onions, finely sliced
  • 1 dl oil
  • 1-2 tbsp soy sauce
  • salt & pepper

PREPARATION

Cut the tofu cheese into small cubes of about5 mm and put them in a large bowl. Cut the spring onions, cucumber and mushrooms finely and add to the tofu. If you make the salad for dinner you can optionally omit the mushrooms. So will be the dinner lighter to digest for everyone.

Add sterilised peas and corn to (for my son, I definitely add enough corn because they’re extra nutritious and healthy for young people). Cut sterilised peppers in equal cubes like the tofu cheese. Then add the soy sauce, ketchup and oil and mix everything well. Bring the salad to taste with pepper and if necessary a little salt and put the salad for at least one hour in the refrigerator.

Serve the salad with dark bread or homemade sandwiches.
