Fantastic, juicy, healthy and delicious pancakes.
Preparation time 20 minutes .. Baking 30 minutes
INGREDIENTS .. 4 pers
- 1 raw celery, grated
- 300 g chopped spinach
- 1 grated, fresh cucumber
- 4 beaten eggs
- baking oil
- salt & pepper
PREPARATION
Beat the eggs, beaten in the pulp and season with salt and pepper.
Preheat the pan to high with some oil and pour the egg vegetable mixture in the pan and let it simmer as you would do with pancakes. Fry on both sides until brown. Bake until the “dough” is of.
You can also use a large pan, and baking the whole egg mixture in one go.
Serve with salsa to taste and enjoy!
