Blueberry sauce

Perfect saus for all meat recipes even with white fish. DELICIOUS !

Preparation time 35 minutes


  • 375 ml fresh or frozen blueberries
  • 60 ml red wine vinegar
  • 60 g brown sugar
  • 1 tbsp thin strips of lemon rind
  • 1 tbsp lemon juice
  • 1/2 tsp ground ginger
  • 1/4 tsp cinnamon


Combine all ingredients and bring to a gentle boil.
Reduce heat to medium-low and simmer for 15 minutes, stirring frequently.
Remove approximately half the sauce and purée in a blender or food processor. Return to pan and continue simmering, stirring frequently until thickened.

At the end mix in little fresh blueberries.
