Delicious squash fritters with home-made velvet ketchup. →. Blessed!
Preparation time 20 minutes .. Baking 30 minutes
INGREDIENTS .. 2 pers
- 400 g Albacore tuna on tin
- 1/3 squash pumpkin
- 1 onion, shredded
- 3 cloves garlic, crushed
- 3 tbsp breadcrumbs (or substitute by gluten free)
- 3 tbsp flour (or substitute by gluten free)
- 2 large eggs
- 2 tbsp fresh, chopped sage
- 3-4 tbsp fresh, chopped parsley
- juice from 1/2 lemon
- salt & pepper
PREPARATION
Drain the tuna and crush it with the fork in the bowl.
Fry the onion, garlic and chopped sage in the pan with a little oil, seasoned with salt and pepper. If the onion is glassy and soft, do everything with the tuna. Peel the pumpkin, grate it in the kitchen robot and put it in the tuna. Add the remaining ingredients and mix well together. Taste the seasoning and if necessary, add some pepper or salt.
Heat the oil in the pan (I use the sunflower oil) and bake the fritters from both sides to golden. There are 10 large or possibly up to 20 small fritters.
Serve with ketchup or salsa to your taste.
