Delicious combination of tasty, fresh salmon with poached rhubarb and orange.
Preparation time 10 minutes .. Baking 8 minutes
INGREDIENTS .. 2 pers
- 2 x 200 g salmon fillet
- salt & pepper
FOR THE SALAD ..
- 250 g rhubarb, diced
- zest of 1 small orange
- some blue grape, halved
- 1 orange, cut à la vif
- 1 tbsp honey
- 2 tbsp chopped coriander leaves
Cut the rhubarb into pieces and blanch in boiling water for about 1 minute. Remove them from the water and cool the pieces in cold water. Strain the rhubarb and place in a bowl. Add the orange zest, orange fruits, blue grapes and honey. Do also chopped coriander leaves in.
Transfer the salmon with pepper and a little salt. Bake the fillets in the butter from both sides about 4 minutes.
Serve the salmon with rhubarb salad and the baked potato.
