Salmon fillets Charentais

Incredible, delicious combination of salmon and the Charentais melon! A real top menu.

Preparation time 30 minutes .. Baking 3-4 minutes


  • 600 g of salmon fillets
  • 1 Charentais melon
  • 1 cup of fish stock
  • 1 cup of cream
  • a dash of Cognac of Pineau des Charentes
  • cold butter
  • chives
  • chervil
  • curry
  • salt & pepper


Remove from the melon as many small spheres that keeps you apart.

Boil the rest of the melon cooked in fish stock. Add the cream and leave to boil. Puree and sieve, so that you obtain a smooth sauce. Add curry, Cognac or Pineau des Charentes to it. Season to taste with salt and pepper. Work it off with pats of butter.

Rub the fillets with salt and pepper. Heat a griddle pan and fry on both sides, 3 to 4 minutes. Arrange them later on warm plates.

Serve melon sauce along the fish and spread the blades of chives and melon balls on the board and work it all off with chervil.
