Salad of chicory and grapefruit

Delicious combination of bitter fruit and vegetables not only does your body lose weight but also lowers cholesterol and sugar level in your blood.

Preparation time 20 minutes


  • 5 stalks young chicory
  • 1 grapefruit
  • 1 orange
  • 1 jonagold apple
  • 2 tbsp yogurt
  • little chopped parsley
  • 1 red onion
  • salt & pepper


Make it clean chicory, possibly remove the outer leaves and cut the bottom off. Cut the endives in half lengthwise and repeat that again.

Peel the grapefruit and orange to the pulp and remove all the white pith. Working over a bowl to catch the juice released.

Wash the apple, cut it in half and remove the core from. Then cut them into slices and put them systematically in the bowl with the juice to prevent discoloring. Peel the onion and cut into thin slices.

Put all the ingredients of the salad on a platter. Put the yogurt with the juice and season with salt and pepper. Mix well. Shred a few sprigs of parsley.

Pour the sauce over the salad or give them separately.
