Radish leaf soup

Healthy soup from vegetable leafs.

Preparation time 45 minutes

INGREDIENTS .. 4 pers

  • 2 bunches of radish leaf
  • 1 bunch of beetroot leaves
  • 2 leeks in rings
  • 1 clove of garlic
  • 100 g Philadelphia cheese
  • oil
  • 1 l vegetable broth
  • salt & pepper

PREPARATION

Fry the leeks and garlic in a little oil. When the leeks are glassy, add washed and sliced ​​radish leafs and beetroot leafs and let it fry for 3 minutes. Pour a splash of broth if the mixture is too dry. Add the broth, bring to the boil and let the soup simmer for 5 minutes.

Add the Philadelphia cheese and blend the soup with a hand blender. Season to taste with salt and pepper. Ready.

Pour the soup into soup bowls and sprinkle with thin strips of radish or croutons.
