Quail fillets on vegetable tartar

This recipe is great for three reasons: the first is to prepare steak tartare of vegetables. Second: recipe can be used not only as the main menu, but also as a starter and third reason is its simplicity.

Preparation time 20 minutes .. Baking 10 minutes

INGREDIENTS .. 4 pers

  • 300 g radishes
  • 1 shallot
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 kl coriander seeds
  • 1/2 kl cumin seed
  • 1 kl mustard seed
  • 12 pcs quail fillet
  • handful of parsley
  • salt & pepper

PREPARATION

Clean the radishes and cut them very small. Peel the shallot and chop finely. Mix the chopped radishes and shallots and add 2 tablespoons of olive oil and lemon juice. Sprinkle with salt and leave for about 15 minutes.

Crush the coriander, cumin and mustard seeds in a mortar. Season the meat with the mixture and fry in the remaining oil. Season with salt and pepper.

Play the parsley, spin dry and chop the leaves coarsely. Mix the parsley into the vegetable mixture.

Divide the minced vegetables over the edges and arrange the quail fillets on the vegetables tartare.

Garnish with chopped parsley leaf and serve immediately.
