Japanese cabbage pins

Fantastic, vegetarian recipe. Great and light as a dinner but perfectly suitable for parties.

Preparation time 10 minutes .. Baking 10 minutes

INGREDIENTS .. 4 pers

  • 1 Savoy cabbage, finely shredded
  • 3 large eggs
  • 1 leek, thinly sliced into rings
  • 2 shallots, cut into rings
  • 6 tbsp oat flakes
  • sunflower oil, for frying
  • 2 tsp marjoram
  • salt & pepper

JAPANESE SAUCE ..

  • 1/4 cup tomato sauce
  • 1 1/2 tbsp Worcester sauce
  • 1/4 t mustard
  • 2 tbsp honey
  • 1 tsp ground ginger
  • 1 t soya sauce

CUCUMBER SAUCE ..

  • 1/2 cucumber
  • 2 cloves garlic
  • 1 tbsp apple vinegar
  • 1 bunch of chives
  • little salt

PREPARATION

My savoy cabbage was big as a Pomelo fruit. Original recipe called for 120 g flour butI substituted the flour with oats.

Put the sliced vegetables in a large bowl and add the beaten eggs, marjoram and seazoning. Add the oats and mix together.

Heat a large pan and drizzle with oil. Place a large spoonful of batter in the centre of the pan. Cook until golden, then turn to cook the other side. Repeat with the remaining batter.

To serve, drizzle the sauce over the pancakes.

To make the sauce, place all the ingredients in a small saucepan and mix together.
