Fennel-celery-dill salad

Amazingly fresh, healthy and delicious salad made from potatoes, apples, fennel, celery and an amazing lemon-herb dressing. Fried salmon or chicken fillet will be a great side dish here 🙂

Preparation time 10 minutes .. Durability 1 week

INGREDIENTS .. 4 pers.

  • 1 big fennel, in thin slices
  • 2 boiled potatoes, in keline cubes
  • 5 stems of white celery, in thin slices
  • 2 spring onions, finely cut
  • 1 shallot, finely sliced
  • 1 sweeter apple, in small slices


  • 300 ml of sour cream
  • zest of 1/2 lemon
  • juice of 1/2 lemon
  • 2 tbsp chopped parsley
  • 4 tbsp freshly chopped dill
  • 3 tbsp freshly chopped mint
  • 2-3 cloves of garlic, pressed
  • salt & pepper


Boil the potatoes, let cool. Then peel them and cut them into smaller cubes in a bowl. Clean the celery and fennel and cut into smaller slices and add them to the potatoes. Finely chop the shallots and pipe onions and add to the other ingredients. Finally add the apple slices.

In a second bowl, put sour cream, crushed garlic, grated lemon zest, chopped herbs. Mix everything together and season with salt and pepper.

Put the dressing with the ingredients in the bowl and mix everything together gently but accurately. If necessary, season with some dill and lemon juice and serve with chiabatta, real Danish knaekbrod, or fresh baguette.
