Father’s wild boar stew

One more recipe prepared during our holiday in Slovakia. Blessed stew of wild boar with real wild blueberries and other yummies.

Preparation time 60-90 minutes

FOR MARINADE ..

  • 0,5 dl balsamic vinegar
  • 0,5 dl orange juice
  • 1 dl olive oil
  • 1 tbsp mustard
  • 7 sprigs of fresh thyme
  • 1 cinnamon stick
  • 2 tbsp freshly ground pepper

FOR THE STEW ..

  • 600 g wild boar in pieces
  • 4 shallots
  • 4 celery
  • 4 carrots
  • 300 g blueberries
  • 300 ml wildfond
  • 300 ml red wine
  • 25 g butter
  • 25 ml crème de cassis
  • 2 tbsp Blueberry jam
  • 2 bay leaves
  • 2 cinnamon sticks
  • 4 cloves
  • salt & pepper

PREPARATION

Mix the ingredients for the marinade and pour over the pieces of wild boar with. Let this be covered, in a chilled place one day marinating.

Spoon the boar pieces from marinade, pat dry with a paper towel and reserve the marinade. Take a heavy-bottomed pot, melt butter and sear the pieces around to round.

Heat in a separate pan the game stock, chopped shallots, red wine and half of the marinade. Pour the boar pieces. Bring to the boil and then add the jam, bay leaves, cinnamon and cloves and simmer for 50 minutes with the lid simmer.

Cut the celery and carrots finely and toss with blueberries, 15 minutes before the end, the wild boar stew. Just before serving, bring the creme de cassis to it and season with salt and freshly ground pepper.
