Butternut squash quiche

Yummy, cheap and easy to make seasonal quiche.

Preparation time 10 minutes .. Baking 20-25 minutes


  • 1/2 butternut squash
  • 230 g of puff pastry
  • 200 ml sour cream
  • 2 eggs
  • 100 g grated cheese
  • salt & pepper


Preheat oven up to 180°C.

Line a baking pan with the pastry. Cut the pumpkin into cubes and put them on the pastry. Beat the eggs with the sour cream and season with salt and pepper. Pour this mixture over the pumpkin. Sprinkle the butternut squash with grated cheese and cook for 30 minutes in an oven at 180°C.

Serve with carrots salad or other fresh lettuce.
