Brussels sprouts soup

Delicious soup from the serie : healthy, tasty and cheap. But besides eating sprouts reduces the risk of obesity, diabetes, heart disease while promoting a healthy complexion, more energy, and overall lower weight.

Preparation time 45 minutes

INGREDIENTS .. 4-6 pers

  • 500 g spruitjes
  • 2 aardappelen, in blokjes
  • 1 sjalot, gesnipperd
  • 1 klein ui, gesnipperd
  • 1,5 l vegetable broth
  • 1 kruidenboeket (tijm, laurier, peterselie)
  • nootmuskaat
  • peper en zout
  • spekblokjes of croutons


If you use the bacon, let them get crisp in a pan without fat or prepare the croutons. Fry the onion and shallot in a little oil (or fat of bacon).

Add the Brussels sprouts and potatoes. Add the broth and bouquet garni in. Allow 15 to 20 minutes to cook with lid, or until the sprouts are thoroughly cooked. Keep some al dente sprouts separately and use them as a garnish for the soup.

Take away the bouquet garni and blend the soup with a hand blender. Season to taste with nutmeg, salt and pepper.

Late as heat through. Garnish with chopped parsley. Serve hot with good fried bacon, croutons and pieces of cauliflower.
