Brown fiber bread ®

I did a bit of cleaning between my ​​bread ingredients. But what a nice loaf of all “bread supplements” I’ve found! Yummy!

Preparation time 20 minutes .. Rising 2×40 minutes .. Baking 30-35 minutes


  • 200 g bread flour
  • 150 g rye flour
  • 50 g soy flour
  • 20 g of crushed wheat
  • 20 g wheat bran
  • 10 g wheat malt
  • 150 ml lukewarm water
  • 200 ml lukewarm milk
  • 20 g soft butter
  • 2 tsp salt
  • 25 g dried yeast
  • 1 tbsp sugar


Combine all dry ingredients together, add the water and milk and knead till homogeneous dough. At the end add the soft butter too. Knead the dough at least 15-20 minutes, then place in a bowl, cover up with plastic foil and leave 40 minutes rising.

After 40 minutes, knead the dough little, give him wished form, put in a greased or with baking paper lined molds, cover up again with a plastic foil and again let rise for 40 minutes.

Preheat the oven to 220°C (hot air ovens -25°C). Bake the bread for 30-35 minutes. After baking, move the bread into a grid and let cool down.

The cooled and sliced ​​you can keep in the freezer.
