Almost gaspacho

Deliciously fresh and tasty soup.

Preparation time 45 minutes


  • 4 tomatoes
  • 1 cucumber
  • 100 g fresh peas
  • 200 ml sour cream
  • 1/2 bundle pipe onions
  • 4 sprigs of fresh mint
  • 4 sprigs of fresh basilicum
  • olive oil
  • lemon juice
  • salt


Heat the oil in a pan and fry the chopped onions until translucent. Peel the cucumber and tomatoes, remove the seeds and cut into cubes. Add the peas to the onions, diced cucumber and tomatoes. Fry all together for a while and add 500 ml water. Let it boil and then add the mint and basil leaves with it. Leave everything boil and puree the soup.

Add even the sour cream and season to taste with lemon juice and salt.

Serve the soup with diced tomatoes and onions in it.

If you want to make this soup as gaspacho, you do not need to cook everything as described above. Just boil the peas until tender and puree everything in the blender for 1 minut.
