Light, fresh and fruity. A marble cake like you’re not used to.
Preparation time 15 minutes .. Baking 20-25 minutes
- 5 eggs
- 250 g icing sugar
- 250 g flour
- 1 tbsp vanilla sugar
- 100 ml lukewarm water
- 100 ml oil
- ½ sachet baking powder
- 2 tbsp cocoa powder
- 100 g apricots
- 3 tbsp chocolate nibs
Preheat the oven to 180°C.
Wash the apricots, remove pits and cut into very small pieces.
Stir in the icing sugar, egg yolks, water and vanilla sugar together until a soft foam. Mix the flour with the baking powder and add them to the foam. Add the oil, and the protein foam to it, and in the end pieces of the still apricots and chocolate nibs.
Line the baking pan with parchment paper and put 2/3 of the dough in the tin. Add the cocoa powder to the last third and bring everything together in the pan. Mix the cocoa mass in the baking sheet lightly with a spiral motion through the white dough.
Bake the marble cake afterwards in the preheated oven for approximately 20-25 minutes.
Let the cake cool after baking and serve with toppings to your imagination.
