ZZ cake ®

Delicious sourish cake. However, I name it ZZ-cake because of short description of the taste in Dutch language. I’m mad about sour fruits tart and my husband of tasty biscuits. And this cake is a perfect combination of both.

Preparation time 20 minutes .. Baking ± 40 minutes

INGREDIENTS .. baking thin

  • 5 prunes, in small pieces
  • 8 little apricots, in small pieces
  • 250 g blackcurrants
  • 375 sugar
  • 2 sachets vanilla sugar
  • pinch of salt
  • 2 eggs
  • dash of Crème de Cassis
  • 300 ml sunflower oil
  • 600 g flour
  • 150 g grated coconut
  • 1 sachet baking powder

PREPARATION

Preheat the oven to 180°C.
Wash the fruit, pitted plums and apricots and cut into small pieces.

Beat the sugar, salt, Crème de Cassis and eggs until creamy. Add the oil and whisk briefly even further. Finally add the flour mixed with powdered sugar and coconut in.

Make a dough ball and take 1/3 off. Spread 2/3 of the dough on a baking sheet while pressing the edges slightly. Divide then the fruit over the cake and sprinkle more crumbs from the remaining dough over the fruit.

Bake about 40 minutes. Let them cool completely after baking.

Serve with a dash of cream to balance the sour taste of the fruit.
