Zucchini & Pumpkin soup

Not enough vegetable to make a soup? I solved it “my way”.

Preparation time 55 minutes


  • 1/2 prei, in ringen
  • 1/2 pompoen, in blokjes
  • 1 klein courgette, in blokjes
  • 4 el olijfolie
  • 3 el gedroogde tijm
  • 1 geperst teentje knoflook
  • peper en zout


Fry the leek and garlic till translucent in the olive oil. Add chopped vegetables and bake for a while, flavor with some pepper, salt and thyme. Pour with water and boil until the vegetables are tender.

Once soft mix the soup with bar mixer, if necessary, season with pepper and salt and ready.

Serve with wasa rolls, or grissini.
