The name comes from the fact that I have decided to make this crustless quiches after cleaning up the leftovers of my fridge. But are they delicious!
Preparation time 10 minutes .. Baking 23-25 minutes
INGREDIENTS .. 16 pcs
- 1/4 of celeriac
- 1 thick leek
- 1 big onion
- 90 g of fresh spinach
- of 7 tbsp of frozen spinach
- 4 tbsp oat flakes (of gluten free brad crumbs)
- 30 g grated cheese
- 2 bigger eggs
- handful parsley
- 1 tsp of baking soda
- salt & pepper
Preheat the oven to 190°C.
Clean the celeriac, leek and onion and chop them in a food processor or a knife into small pieces. Put all the vegetables in the bowl, mix the eggs and oat flakes and bring to taste with salt and pepper.
Put the papers in muffin tins and fill the mixture. Sprinkle with grated cheese and bake for 23-25 minutes in preheated oven.
You can also bake them as pins, just in the pan on oil.
Remove from the oven and enjoy!
