Summer salad Nr.6

Pasta salad with leek and corn. I should better say “Magic” made in less than 10 minutes and for less than 1 EUR. Delicious, incredibly cheap and hugely nutritious meal, with lightly spicy and fresh flavour.

Preparation time 8 minutes


  • 200 g mini pasta rigatoni (or gluten-free)
  • 1 thick leek, only the white & light green part
  • 4 tbsp lemon juice
  • 100 g canned corn
  • 200 g sour cream, or yogurt
  • 2 stroked tbsp mustard
  • salt & pepper


Cook the pasta al dente in lightly salted water. Sieve and put the pasta in a large bowl.

Clean the leek, cut it in half lengthwise and then into very thin half-rings. Put them in the drained pasta with corn. Add the lemon juice and mix well together.

Mix in a separate bowl, combine the sour cream with mustard and pepper and mix among the pasta mixture.

Season with some salt and pepper (if necessary) and done.
