Delicious salad from domestic SUPER FOODS : boiled wheat, green asparagus, snow peas, savoy cabbage and blueberries. Why to import superfoods as they grow in our backyard, right?
Preparation time 45 minutes
INGREDIENTS .. 4 pers
- 1/2 savoy cabbage
- 250 g snow peas
- 300 g green asparagus
- 7 tbsp of barley groats
- 125 g of blueberries
- 2 tbsp elderflower vinegar
- salt & pepper
PREPARATION
Wash and boil the barley groats in slightly salted water. Sieve and keep apart.
Blanch the asparagus, snow peas and savoy cabbage cut into slices for a 3 minutes. Splash with ice cold water and drain.
Mix in a big bowl all ingredients. Season with salt, pepper and elderflower vinegar and serve with blueberries.

Instead of barley groats you can use quinoa. But that is 10 times more expensive than barley groats (in Belgium for sure). And also, the same “service” you can get also by using brown rice. So why to pay too much?
