These cookies are very tasty and nutritious. Also nice for the drink but than is best to make them a bit smaller.
Preparation time 10 minutes .. Baking 20 minutes
INGREDIENTS .. 10 pcs
- 500 g salmon fillet, cut into 5 mm
- 3 tbsp breadcrumbs
- 1 egg, beaten
- 1/2 tsp grated lime peel
- 3 tsp lime juice
- 3 tsp fresh chopped dill
- 1 clove garlic, crushed
- 2 tbsp olive oil
- 1 tbsp flour
- salt & pepper
For celiac’s: just replace the breadcrumbs with chopped glutan free bread slices.
Put salmon, breadcrumbs, egg, lime zest, 3 teaspoons lime juice, chopped dill in a bowl and stir until the mixture binds together. Sprinkle a work shelf with little flower and then make thin cookies using a garnish ring. Sprinkle also the top of the cookies with a little flour and bake in 2 tbsp olive oil on both sides until golden.
Serve with mayonnaise mixed with kapars and chopped pickle.
