My son loves homemade sorbets and ice creams. So before leaving for the holidays I prepared for him original POVVI sherbet from three elder products.
Preparation time 30 minutes .. Cooling over night
INGREDIENTS .. 6 pers
- 200 ml + 250 ml elderberry syrup →
- 4 dl elderflower water →
- 80 g elderflower honey →
- 200 g sugar
- 4 slices of gelatine, soaked in cold water
- with of a large egg
Elderflower water means actually liquid sieved of elderberry flowers, before they’re mixed with sugar and cooked until syrup.
Place 1 cup of elderberry syrup, elderflower water, honey and sugar in a saucepan over medium heat. Bring to a boil. Remove from heat and add the remaining 200 ml elderberry syrup. Cool a bit and add the soaked gelatin. Stir well until the gelatin dissolved. Now tap the with of egg until frothy. The protein will ensure the creaminess of sherbet.
Put the mixture into a container and place in the refrigerator for several hours.
Place chilled elderberry mixture in an ice cream maker and process the sorbet according to the manufacturer’s instructions.
