Irresistible tasty and simple salad as meal or side dish for your meat.
Preparation time 30 minutes
INGREDIENTS .. 4 pers
- 1 kg mini potatoes
- 1 shallot
- chopped parsley
- elder flower vinegar
- 50 ml olive oil
- bunch of chives
- bunch tarragon
- bunch of mint
- salt & pepper
PREPARATION
Boil the potatoes (or steam) in the skin, let cool down softly and peel. Then cut in circles, or smaller pieces and put in the bowl.
Make the dressing: mix together olive oil, elder vinegar, salt and pepper and poor over potatoes. Mix wel but gently together. Chop the herbs and shallots finely and place in a bowl. Mix again all together and finish them as needed with salt and pepper.
Serve lukewarm together with grilled or baked meat, poultry or fish.
