Potato sourdough

This type of leaven is developing more slowly than other types, but the extra time is worth it. Preparation of potato sourdough starter takes about 5-7 days.

INGREDIENTS

  • 2 mid-sized, raw, peeled potatoes
  • 1 tsp honey
  • 1 tbsp sifted spelt flour

PREPARATION

Mash the potatoes into a mushy whole. Stir the honey and spelled flour through.

Keep this mixture in a jar with tight-fitting lid and stir the s’ morning and evening by.

The leaven is ready when the mass begins to bubble. If the leaven in the refrigerator, you should provide a weekly feed with 60 grams of aardappelpap and spelled flour 1 tbsp.
If you keep it at room temperature, you should feed him this way every day. The sourdough should have a consistency of thick mush.

If you’ve made him too much, keep the rest in a plastic bag in the freezer.
