Pork tenderloin with fennel

Simple but rich in taste. And definitely a healthy dish.

Preparation time 15 minutes .. Baking 30 minutes


  • 500 g pork tenderloin
  • 2 fennel bulbs
  • 2 red onions
  • 5 tbsp olive oil
  • 1 bulb garlic
  • salt & pepper
  • handful of rocket salad


Preheat the oven to 180°C. Season the pork tenderloin with salt and pepper. Fry on both sides golden brown in 2 tablespoons hot olive oil. Place the meat on a baking sheet.

Clean the fennel and cut into slices. Peel the onions and cut into rings. Arrange the pieces of onion and fennel around the pork tenderloin on the oven plate. Halve the garlic bulb and arrange a half on each side of the tenderloin. Season with salt and pepper. Sprinkle with the rest of the oil. Allow 30 minutes baking in the oven.

Cut the meat into slices just before serving. Garnish with rocket salad and serve hot.
