Fantastic, freshly made and gluten-free pizza.
Preparation time 10 minutes .. Rising 30-45 minutes .. Baking 25 minutes

- 450 g fresh spinach
- 1 clove garlic
- 1 tbsp olive oil
- 150 g ricotta
- nutmeg
- 2 full tbsp of ketchup
- grated or sliced cheese
- salt & pepper
PREPARATION
Prepare the dough according to the recipe in the link. Preheat oven to 240°C.
Wash the spinach and spin dry it. Peel the garlic clove and prick it on a fork. Heat the olive oil in a pan with high sides, add the spinach and stir well with a fork until the spinach has shrunk. Put the spinach in a bowl. Put the ricotta with it, mix and season with a little salt and nutmeg.
Place the pizza dough into a greased tin or on a baking sheet. Spread the pizza dough with ketchup and fill with the spinach to 1 cm from the edge. Cut the cheese into small pieces and spread over the spinach and sprinkle with grated cheese. Bake 25 minutes in the oven.
Serve immediately after baking.
