- 150 g icing sugar
- 30 g sliced almonds
- 50 g flour
- 2 egg whites
- 1 tsp pistachio pâté
- 50 g non salty pistachios for decoration
- 100 g icing sugar, for coating
PREPARATION
Mix the first two almond products, flour and powdered sugar. Beat the egg whites until stiff and fold them into sections loosely by the almond flour mixture. Add the pistachio pâté and mix well. Take small balls of dough and roll them in icing sugar. Place on a lined baking sheet and decorate the cookies with pistachio. Press the nut light in the amaretti dough and bake 20 minutes at 150°C.
Pistachio paste can be replaced by teaspoon of bitter almond extract (no aroma).
