Italian Amaretti

The only, real and delicious Italian amaretti.

Preparation time 20 minutes .. Baking 16-20 minutes


  • 2/5 cup chopped almonds
  • 1/2 cup icing sugar
  • 4 tbsp almond slices
  • 1/5 cup flour
  • 2 egg whites
  • 1 tsp bitter almond extract (not flavoring)
  • 20 pcs unshelled almonds for decoration
  • 2/5 cup icing sugar, for decoration


Mix the two almond products, flour and powdered sugar. Beat the egg whites until stiff and fold them into sections loosely through the almond flour mixture. Add almond extract and mix well. Take small balls of the dough and roll them in icing sugar. Place on a lined baking sheet and decorate the cookies with almond half. Push the nut slightly into the dough and bake amaretti 20 minutes at 150°C. Mine have been oven baked after 16 minutes in a hot air.

I have made ​​a double volume of the batter and then divided in two parts. In the first half I added the pistachio paste because these are for my girlfriend’s birthday Louisa. In the second half I added a teaspoon of bitter almond extract. These are made for my son for his name day.
