We love to eat meat as a side dish. Specially in the summertime. An that’s why I made this salad with delicious Superano ham.
Preparation time 40 minutes
INGREDIENTS .. 6 pers
- 50 g brown lentils
- 50 g koral lentils
- 100 g chickpeas
- 100 g rice
- 1 sweet red pepper, in little strips
- 1 celery stick, in thin strips
- 150 g Italians Superano ham
- 1 shallot, finely chopped
- 1 tbsp sour cream
- 2 tbsp mayonnaise
- 1 tbsp coarsely chopped fresh parsley, flat or curly
- salt & pepper
PREPARATION
Blanch the lentils by plunging them into a pan of boiling water, then drain in a colander and refresh under cold water. This process not only flushes the lentils well, but it also speeds stifle the whole process.
Do the same with all legumes, boil them and put them together in a large bowl. Add the chopped shallot, celery and peppers. Finally, add the ham at. Season with pepper (no salt needed) and mix well together.
I had a small bowl mix together bruschetta herbs with the mayonnaise and sour cream. Mix dressing among the salad and garnish with chopped parsley.
