Focaccia is a flat oven-baked Italian bread, similar in style and texture to pizza doughs. It can be topped with herbs or other ingredients. Focaccia is very popular and is usually seasoned with olive oil and salt, sometimes herbs, and can be topped with onion, cheese and meat, or flavoured with a number of vegetables. This one is really special : topped with fresh thyme and gooseberries.
Preparation time 15 minutes .. Rising 2 x 60 minutes .. Baking 30 minutes
INGREDIENTS .. 4 pers
- 4 cups all-purpose flour
- 1 pint gooseberries
- 1/4-oz. active-dry yeast
- 2 tbsp sugar
- 1 tsp fine salt
- ¼ cup olive oil + for bowl, baking sheet and drizzling
- 4 springs fresh thyme
- coarse sea salt, for sprinkling
PREPARATION
In the bowl combine the yeast, sugar and 1 ¼ cups warm water and let stand until foamy.
Add flour, salt and oil and stir mixture to combine. Knead dough for 10 minutes, than transfer dough to a well-oiled bowl, cover with a kitchen towel and let rise until doubled in bulk; about 1 hour.
Meanwhile preheat the oven up to 350°F.
Transfer dough to a well-oiled large rimmed baking sheet and stretch dough to fit. Cover and allow dough to rise until it’s puffed and fills the pan, 30 minutes to 1 hour. Make little holes with your fingers, sprinkle dough with gooseberries and thyme, and drizzle with olive oil. Season with sea salt.
Bake focaccia in a preheated oven about 30 minutes or until golden brown. Let cool completely and cut into squares.
