Light, healthy and very tasty as dinner or lunch.
Preparation time 10 minutes .. Baking 20 minutes
INGREDIENTS .. 4 pers
- 4 x 200 g cod fillets
- 50 g butter
- 100 g almond flour (or ground pistachios)
- 2 tbsp fresh chopped parsley
- 3 tsp fresh chopped chervil
- 2 tsp fresh chopped dill
- 3 cloves garlic
- 200 ml Noily Prat
- 4 tbsp olive oil
- little salt
PREPARATION
Preheat the oven to 210°C and grease the oven dish with a little olive oil.
Melt the butter in a saucepan. In a bowl mix the melted butter, almond flour, olive oil and chopped herbs. Pers above the garlic and mix through. Salt cod fillets gently, put them in the greased ramekins, pour the wine and spread the herb mixture over the fillets. Bake in the preheated oven for 20 minutes.
Serve with boiled or mashed potatoes and a fresh salad to season.
