I had left some pasta after the lamb steak with pasta with mint pesto, which we had yesterday. So I decided to create a Mediterranean salad today, because the flavors were so yummy. The result is a fresh, tasty and healthy lunch.
Preparation time 10 minutes
INGREDIENTS .. 2 pers
- remnants of pasta with mint pesto
- 4 cherry tomatoes, quartered
- few black olives
- 1 little cucumber, in pieces
- chives
- 3-4 tbsp yoghurt
- 1 tbsp lemon sap
- salt & pepper
PREPARATION
Put the vegetables in the remains of the pasta. also cut the olives into slices and add to. In a small bowl mix together the yogurt, lemon juice and chives. Add some salt and pepper and mix together.
Pour the dressing over the pasta with vegetables and mix lightly with each other. Ready!
