Salad worthy of bringing to a holiday feast ! Yummy, fresh, crunchy and with delicious flavour. Great as a light dinner or lunch but also as a side dish… You name it.
Preparation time 15 minutes
INGREDIENTS .. 2 pers
- 1 fennel
- 2 small cucumbers
- 1 pear
- some shavings of Parmezaan
- 1/4 cup of pomegranate seeds (optional)
APPLE-ELDERFLOWER VINAIGRETTE
- 5 tbsp elderflower vinegar
- 1 apple, peeled, coarsly chopped
- 1 tbsp lime juice
- 1 tbsp finely diced shallot
- 1 tsp brown sugar
- 10 tbsp sunflower oil
- salt & pepper
PREPARATION
To make vinaigrette, puree apple, vinegar and lime juice in a blender until smooth. Strain mixture through a sieve, squeezing solids to get all the liquid from them. Add shallot and sugar, stirring until sugar dissolves. Add oil until well combined. Season with salt and pepper to taste.
Combine salad ingredients with vinaigrette.
