Stew on Guiness

Tender meat in Guiness, sweet carrots, blissful bacon from your best friends. What more could one ask for…

Preparation time 75 minutes


  • 1 kg pork cheeks, cleaned
  • 1 bottle Guiness
  • 150 g smoked bacon, diced
  • 2 tbsp mustard
  • 2 dl water
  • 1 big onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 sprigs thyme
  • 2 bay leafs
  • 4 carrots, cut into rings
  • butter
  • salt & pepper


Cut the pork cheeks in half. Leave them in a casserole around beautiful colors in a knob of butter.

Add the onion, garlic and bacon and fry it. Add the Guiness, spices, mustard and water and let simmer for an hour on low heat.

Add the carrots and cook for about 30 minutes. Continue to simmer and cook until the meat is.

Remove meat and roots from the cooking liquid and cook until sauce thick. Put back in the carots and meat sauce.

Do the pigs cheeks the day before ready, add then the day itself the root and let cook for about 45 minutes.

Serve with baked or cooked potatoes.
