Savory clafoutis with broccoli

Simply delicious meal! Specially if you love savory things like me.

Preparation time 20 minutes .. Baking 30 minutes

INGREDIENTS .. 2-4 pers

  • 1/2 blanched broccoli
  • 75 g bacon in strips
  • 1 shallot
  • 3 eggs
  • 200 g flour
  • 250 ml fat milk
  • 120 g soft cheese
  • 3 hands full of spinach
  • 50 g butter
  • fresh thyme
  • salt
  • olive oil

PREPARATION

Preheat the oven to 180°C.
Bake the bacon in the pan until soft crunchy. Transfer on the kitchen paper and let rest.
Wash and chop the shallots and divide the broccoli into roses. Boil the broccoli in salted water for 3 minutes, shake off with ice-cold water and allow to leak.

Heat two tablespoons of olive oil in a large pan over low-medium heat.
Bake the shalot Season with pepper and salt and bake for 10-15 minutes until soft but not over cooked.
Remove them from the fire, add fresh thyme and let it leak well.

Wash the spinach and dry with kitchen paper.
Mix the eggs in a bowl and add the sifted flour; little by little.
Stir in the milk and the soft butter and season with pepper and salt. Add the soft cheese and spinach and stir until everything is mixed well and you have a smooth consistency.

Butter a 25 cm baking pan and slice the broccoli pieces to the bottom. Sprinkle them with shallot and bacon. Pour the mixture into the pan and sprinkle with thyme.

Place the Clafoutis oven in the oven and bake at 180°C for 30 minutes until it is buffered; The inside must touch firmly and be a little gold.

You can pre-make the clafoutis and then heat it before it is served. But it can also be served at room temperature.
