Roasted pork with chestnut purée

PREPARATION

Prepare the red wine sauce as described in the recipe of the link. And keep them warm until use.

Preheat the oven to 200°C.
Heat the butter in the pan. Transfer the pork seasoned with salt and pepper in a pan and bake on butter on all sides until golden brown. Put him afterwards in a baking dish and bake in the preheated oven for 35 minutes.

Meanwhile, add the chestnuts into the pot along with the cream and water and bring to a boil. Boil them till ready. Then put everything in a blender and puree until smooth purée. Season to taste with salt and pepper and keep warm until use.

When all is done present the food on the heated plates and serve with a glas of red wine.
