Ragout of liver with orange

Delicious meal for a busy day or a person with severe blood loss.

Preparation time 25 minutes ..

INGREDIENTS .. 2 pers

  • 2 thick slices of veal or beef liver (1 inch)
  • 3 small fresh onions
  • 2 chemically untreated oranges
  • 20 g butter
  • fine chopped coriander
  • salt & pepper

PREPARATION

Wash the oranges off, press one of them and cut the other with the peel into very small cubes.
Cut the onions into thin slices and fry in a frying pan brown in butter. Add the juice of the oranges and diced by. Cook for 5 minutes on low heat.

Cut the liver into cubes or strips and fry them quickly over high heat and 10g butter in a non-stick pan. Pour the warm oranges on the edges. Put the liver on top, sprinkle with finely chopped coriander and serve immediately.

Season the liver with salt absolutely not during the preparation or it’ll get hard as shoe sole.
